Cinnamon is a very old spice that is mentioned several times in the Old Testament. Cinnamon comes from the evergreen cinnamon tree and is not a fruit, but the inner bark of the cinnamon tree, which has been stripped of its outer bark.
Ceylon Cinnamon, often also called "true cinnamon", comes from Sri Lanka (whose former name is "Ceylon") and is now also cultivated to some extent in southern India.
Ceylon cinnamon is far more aromatic, milder and less spicy than Cassia cinnamon.
Ceylon cinnamon is widely used in Sri Lankan and Indian cuisines. It is also suitable as an aromatic spice for curries and the delicately flavoured rice dishes of Indian cuisine. It is also widely used to flavour tea.
