Asafoetida is a disulfide- and foetida-containing resin of a domestic plant in Pakistan and should be part of the spices selection in every household and kitchen. It is ideal in combination with fenugreek, ginger, cardamom and rock salt and is available in powder and paste. In Ayurveda, it is also known under its Sanskrit namne Hingu.
Asafoetida has a strong, garlic-like odor. Therefore, it is advisable to keep asafoetida in an airtight container. Used sparingly, it gives exotic dishes a special delicious flavor. Unlike garlic, asafoetida does not act tamasic (dulling) on the senses and the mind. According to Ayurveda, it strengthens the digestive fire Agni and soothes Vata (air/ether element).
Cosmoveda organic Asafoetida is ideal for curry and dal dishes of the Indian and Asian cuisine. The added fenugreek rounds up the flavor perfectly. It can also be used as a substitute of (or tasteful addition to) onions and garlic.
