Asafoetida is a disulfide- and foetida-containing resin of a domestic plant in Pakistan and should be part of every well-assorted spice-shelf in the kitchen. Usually it is combined with ginger, cardamom and rock salt and is available in powder and paste. It is also used as a substitute of (or tasteful addition to) onions and garlic.
Asafoetida has a strong, garlic-like odor. Therefore, it is advisable to use Asafoetida in small amounts and keep it in an airtight container. Used sparingly, it gives exotic dishes a special delicious flavor. Unlike garlic, asafoetida does not act tamasic (dulling) on the senses and the mind. According to Ayurveda, it strengthens the digestive fire Agni and soothes Vata (air/ether element).
Asafoetida is ideal for curry and dal dishes of the Indian and Asian cuisine. The added fenugreek rounds up the flavor perfectly.
